Chocolate Mint Fudge

6 cups raw shredded coconut
1 cup raw cacao powder
1 cup agave nectar
12 drops peppermint oil

Blend coconut to a buttery consistency. Add remaining ingredients and blend to mix thoroughly (it will eventually form into a large ball in the blender or food processor).

Spread out into a glass pan and sprinkle top with shredded coconut to desired amount. Refrigerate for several hours (or overnight) and cut into fudge chunks. Quick, simple and Delicious!

Variation: Substitute Peppermint Oil for Almond Oil for "Almond Joy Fudge." (Note: Can also fold in chopped nuts of choice if desired)
