3 med. sized Bananas, ripe & room temperature
3/4 c. Raw Honey
1/4 c. Extra Virgin Coconut Oil, melted
1 tsp. Vanilla Extract
1 1/2 c. Gluten-Free All Purpose Baking Flour (Bob's Red Mill)
1/2 tsp. Baking Soda
1/3 c. Coconut, shredded unsweetened
1 c. walnuts or pecans, chopped
Mash bananas in medium size bowl. Add melted coconut oil, honey, and vanilla. Mix well with a fork. Combine the dry ingredients together and add in small batches to the wet ingredients mixing well with each addition. Finally fold in the coconut and chopped nuts.
Pour into a greased glass loaf pan (I grease it with coconut oil). Bake at 350 degrees for 45 minutes uncovered. Then bake 25 additional minutes covered with foil. It comes out perfect every time! I use all organic ingredients.
Note: A real yummy (naughty) treat is to grill (it's really frying) a piece of banana bread in coconut oil (or butter if you like), crisp on each side. Then smother it in real maple syrup. Well, you don't have to smother it, but I like to. It is SOOOO good! I don't do this often, but when I do, I really enjoy it. (~_~)
